Sora, the first Italian-Japanese influence restaurant of San Diego, is located in downtown San Diego's financial district. Created by San Diego restaurant pioneer Alessandro Minutella with Nobu-trained Executive Chef Noriyoshi Teruya and restaurant operations executive Daniele V. Gilardi, Sora, meaning "sky" in Japanese, combines Italian traditions of ravioli, pastas, and tomato-based sauces to meet the distinct flavors of wasabi, sake, edamame and sea urchins.
Minutella and Gilardi decided to merge Teruya’s traditional Japanese style with the Italian influence Chef Teruya received while working, living and eating in Italy. As the first Italian-Japanese influenced cuisine restaurant in San Diego, Sora serve traditional sushi, but also dishes such as Wagyu Menchi (Wagyu meatballs with mozzarella), Uni&King; crab (Garlic & green onion ~ edamame puree ~ on tagliatelle pasta), Doria (Japanese Style Risotto), Ika-Meshi (Stuffed Calamari) and more.
Born in Tokyo, Japan in 1974, Chef Teruya has worked under renowned Chef Nobu Matsuhisa in the flagship Nobu restaurant in New York City’s famed Tribecca neighborhood since 1999. In 2002, Chef Nobu handpicked him to be one of the chefs who eventually became one of the anchor chefs for Nobu Matsuhisha and for his Nobu empire worldwide. There he learned to speak fluent Italian and incorporate Italian influences into his cooking.
Minutella is a noted icon in the restaurant industry for the past 20 years of his San Diego restaurant openings including Osteria Panevino, Greystone Steak House, Osetra Fish House and Chocolat. Gilardi, the General Manager of Sora, was formally the manger of HIllcrest's Chocolat and Greystone Steak House. Sora is designed by Greg Mueller of Tucker Sadler.
Sora has created an iPhone app (now available in the Apple app store) that features information about new specials, social media updates and current food and beverage menus. In addition, the app allows users to unlock special offers with a QR code as well as to place reservations or to-go orders through the app.
